If your fireplace or pizza oven smokes back into the room, the issue is usually draft. A flue that's too short, a flue that's been retrofitted, a kitchen with too much make-up air being pulled the wrong way — any of these can stop a chimney from drawing the way it should. A chimney fan, mounted at the top of the flue, pulls the smoke and gases up and out. Residential or commercial — same principle, different sizes.
